Do you have a hard time getting your little one to eat vegetables? Don’t worry, there are ways to make dishes your child will love and won’t even suspect are packed with healthy items. Be creative with your presentation and keep reminding your little one of the importance of eating healthy. Don’t forget to set an example at the table too!

Prepare these vegetable recipes that will make your child want to eat healthy:

Delicious French fries with green beans

What do you need:

  • 1/2 pound fresh green beans, ends trimmed
  • 3/4 cup panko breadcrumbs
  • 1/3 cup hummus
  • 1/4 cup grated Parmesan cheese

Mix the breadcrumbs and Parmesan cheese on a plate, then place the hummus on a separate plate. Cover a greased baking sheet with heavy-duty aluminum foil. Using clean fingers, hold one end of a bean and roll it through the hummus to coat, then roll it in the cheese and breadcrumb mixture. Place the covered bean on the baking sheet. Repeat with the rest of the green beans.

Bake in a preheated oven (400 degrees) for 15 minutes or until desired doneness is reached. Let cool before serving with your choice of sauce.

Honey Bacon and Roasted Carrots

What do you need:

  • 1 kg. carrots, peeled and chopped into 1-inch pieces
  • 2 tablespoons honey or maple syrup
  • 2 strips of bacon, cut into cubes

Combine carrot pieces, honey/maple syrup, and bacon in a large bowl. Stir until ingredients are well combined and carrots are coated. Place the mixture on a greased baking sheet and bake at 400 degrees for half an hour. When ready, check (using a fork) if the desired doneness of the carrots is achieved. Let cool a few minutes before serving. Season with a little cayenne pepper if desired.

Easy Zucchini Pepperoni Pizza

What do you need:

  • 3 zucchini (preferably the same size), ends trimmed, cut into 3/8-inch-wide slices
  • 20 pepperoni slices, cut in half
  • 1 1/2 cups grated mozzarella cheese
  • 1 teaspoon Italian herb blend
  • 1 teaspoon Spike seasoning

Arrange the zucchini slices on a greased baking sheet (covering the sheet completely). Season slices with Spike Seasoning and Italian Herb Blend then top with mozzarella. Grill on a preheated broiler until the cheese begins to melt, about 2-3 minutes. Arrange the pepperoni slices on top and grill for an additional 3-4 minutes. Chill before slicing and serving.
